Louis Pasteur first discovered the potency of garlic in eliminating harmful bacteria. We now understand that it is due to Allicin. Although this is not directly found in garlic, it is produced in garlic by the enzyme alliinase working on allicin (found in garlic when crushed). This by product (Allicin) is what also provides us with garlics distinct smell.
